EGGPLANT MOUSSAKA

Ingredients

  • Minced meat* (beef or lamb) – 500 g
  • Eggplant – 300 g (cut into halves)
  • Onion (medium) – 1 pc (chopped)
  • Garlic – 2-3 cloves (finely chopped)
  • Tomato – 2-3 pcs
  • Tomato paste – 5 tbsp
  • Chickpeas – 1 multi cup (optional)
  • Cinnamon powder – ½  tsp
  • Dried mint – ½  tsp
  • Salt – to taste
  • Vegetable stock – 1 tsp
  • Water – 2 multi cups
  • Oil – 30 ml

Directions

Press the “Menu” button, select the “Fry” program and press the “Start” button. Let the bowl heat for 3 minutes. Fry eggplant from all sides and set them aside for 5 minutes. Stop the multicooker by pressing the “Cancel” button.

Pour oil into the multicooker bowl. Press the “Menu” button, select the “Stew” program and press the “Start” button. Let the bowl heat for 3 minutes, sauté onion and meat for 2-5 minutes or until onion is tender. Add garlic and stir for few minutes, then add the tomato and stir for 5 minutes or until tomato is tender.

Add vegetable stock, tomato paste, water (2 multicups), and the prepared eggplant. Bring to boil, then simmer for 12 minutes or until eggplant is almost cooked. Add cinnamon powder and dried mint and simmer for 10 minutes or until eggplant is completely cooked. Then press the “Cancel” button.

Add garlic and stir for few minutes, then add the tomato and stir for 5 minutes or until tomato is tender.

Fry eggplant from all sides and set them aside for 5 minutes. Press and hold “Cancel” button to stop the multicooker.

Select the “Stew” program. By pressing the “Product” button go to the “Meat” section. Let the bowl heat for 3 minutes. Add and sauté onion with meat for 3 minutes or until onion is tender. Add garlic and stir until fragrant, then add tomato and stir for 5 minutes or until tomato is tender.

Add vegetable stock, tomato paste, water (2 measuring cups), and the prepared eggplant. Bring to boil then simmer for 15 minutes or until eggplant is almost cooked. Add cinnamon powder and dried mint and simmer for 10 minutes or until eggplant is completely cooked. Press and hold “Cancel” button.
