COCONUT TOFU KEEMA

Ingredients

  • Olive oil – ¼ multi cup
  • Garlic – 4 cloves (minced)
  • Onions (medium) – 1 pc
  • Tofu (14 oz.) – 1 package (extra firm, diced)
  • Coconut milk 
 – 1 can (16 oz.)
  • Cumin powder – 1 tbsp
  • Curry powder – 1 tsp
  • Ginger – 1 and ½ tsp (ground)
  • Salt 
 – 1 tsp
  • Red pepper paste 
 – 1 tsp
  • Tomato sauce – 6 multi cups
  • Frozen green peas 
 – 1 and ½ multi cups (thawed)
  • Carrot – 1 and ½ multi cups (chopped)

Directions

Pour oil into the multicooker bowl. Select the “Fry” program and press the “Start” button. Let the bowl heat for 3-5 minutes and put fresh tofu, fry it until it becomes golden brown. After frying keep tofu aside on paper towel to absorb the oil. Press the “Cancel” button.

Pour oil into the multicooker bowl. Press the “Menu” button, select the “Stew” program and press the “Start” button. Let the bowl heat for 3-5 minutes, put garlic, onion, closed lid and cook for 5 minutes, stirring occasionally. After that stir in coconut milk, cumin, curry powder, ginger, salt and red pepper paste; bring to a boil and cook for 10 minutes. Stir in tomato sauce, peas, carrots and cook for 5-10 minutes, then add tofu and cook 10-15 more minutes with the lid closed. Press the “Cancel” button.

After that stir in coconut milk, cumin, curry powder, ginger, salt and red pepper paste; bring to a boil and cook for 10-15 minutes. Stir in tomato sauce, peas, carrots and cook for 10-15 minutes, then add tofu and cook for 5-10 minutes more with closed lid. Press “Cancel” button.

Let the bowl heat for 3 minutes and put the fresh tofu, fry it until the end of the program (should be golden brown). After frying keep tofu aside on paper towel to absorb the oil. Press and hold “Cancel” button.

Put oil in the multicooker bowl, select the “Stew” program. By pressing the “Product” button go to the “Vegetables” section. Press and hold “Start” button. Let the bowl heat for 3 minutes, put garlic, onion, cover, and cook for 5-7 minutes, stirring occasionally. After that stir in coconut milk, cumin, curry powder, ginger, salt and red pepper paste; bring to a boil and cook for 15 minutes. Stir in tomato sauce, peas, carrots and cook for 10 minutes, then add tofu and cook for 10 minutes more with closed lid. Press and hold “Cancel” button.
