SPICY ASIAN PEANUT SHRIMPS

Ingredients

  • Limes (medium)
 – 2 pcs
  • Peanut butter (creamy, preferably natural)
 – ½ multi cup
  • Asian garlic chili paste – 2 tsp
  • Fresh mint – 3 tbsp (chopped)
  • Shrimps (steamed) – 500 g or 16-20 pcs (peeled, with tails)

Grate ½ teaspoon zest from one of the limes and then juice both limes. In a food processor, blend the lime zest and ¼ measuring cup lime juice with the peanut butter, chili paste and ½ measuring cup of cold water. Add more lime juice and chili paste to taste, plus 1 or 2 more tablespoons of water as needed to loosen the mixture to a thin dipping sauce consistency. Transfer the sauce to a medium bowl and stir in the mint.

Preparing shrimps: put 3-4 measuring cups of water in the multicooker bowl. Put shrimps in the steam container and attach it to the multicooker bowl. Press the “Menu” button, select the “Steam” program and press the “Start” button. Steam shrimps for 25 minutes.

Sprinkle the sauce with additional mint and serve with shrimps.

Sprinkle the sauce with additional mint and serve with the shrimps.
