VETKOEK & MINCE

Ingredients

Vetkoek

  • Cake flour – 7 multi cups (1 kg)
  • Salt – 3 tsp
  • Sugar – 2 tsp
  • Instant yeast – 1 packet (10 g)
  • Margarine – ¼ multi cup
  • Vegetable oil – for deep frying
  • Warm water – 3-3½ multi cups

For serving:

  • Cheddar cheese (grated)
  • Apricot jam or honey
  • Curried mince

Directions

To make the vetkoek dough, combine the flour, salt and sugar in a mixing bowl. Pour in the yeast. Add the margarine to the dry ingredients and rub in using your fingers or the mixer.

Add sufficient water to form soft dough.

Knead for 10 minutes by hand (or for 5 minutes in a mixer), until the dough is smooth and elastic.

Place the dough into the bowl and cover with a damp cloth.

Leave the dough in a warm place to rise until it doubles in size.

Knock down again and divide into equal pieces (approximately 30).

Roll into balls and place on a floured baking tray.

Allow to proof in a warm place for another 30 minutes.

Select the “Fry” program. Pour the oil in the MultiCooker bowl and heat the oil for 5-8 minutes. Fry the balls in hot oil until golden brown make sure that all the sides of vetkoek are cooked evenly.

Drain on paper towel to remove excess oil.
