ARABIC RICE PUDDING

Ingredients

  • Short grain rice – ¾ multi cup
  • Whole milk – 8 multi cups
  • Water – 1 multi cup
  • Orange blossom water – ½ multi cup
  • Pistachios nuts (optional) – ⅓ multi cup (finely chopped)
  • Mistika (ground) – ½  tsp
  • Sugar – 1 tbsp (finely ground)
  • Cornstarch – 1 tbsp

Directions

Before cooking, soak the rice for 40 minutes.
Drain the rice and put it in the multicooker bowl, pour water (1 measuring cup). Select the “Grain” program and press “Start” button, bring to boil and stir for 5-8 minutes. Then add milk and stir constantly for 10 minutes (cook with open lid).
Separately mix the ground mistika, sugar with the blossom water and add this mixture to the rice pudding. Stir well and cook for another 5-8minutes. Then add the cornstarch mixed with half measuring cup of water and mix it to the rice pudding, stir well and cook for 2 minutes more. Press “Cancel” button to stop the program.

Remove the multicooker bowl and pour the pudding into a rectangle-serving dish or bowls, keep the pudding aside to make it cold (around 10 minutes), then put it in the fridge to make it very cold before serving. The pudding can be garnished with the pistachios or sprinkled with ground cinnamon.
