EGGPLANT CURRY (BAINGAN BHARTA)

Ingredients

  • Eggplant (large) – 1 pc
  • Vegetable oil 
 – 2 tbsp
  • Cumin seeds 
 – 1 tsp
  • Onion (medium) – 1 pc (thinly sliced)
  • Ginger garlic paste – 1 tbsp
  • Curry powder – 1 tbsp
  • Tomato – 1 pc (diced)
  • Plain yogurt 
 – ½ multi cup
  • Fresh jalapeno pepper – 1pc (finely chopped)
  • Salt 
 – 1 tsp
  • Cilantro – ¼ bunch (finely chopped)

Directions

Pour water into the multicooker bowl. Select the “Steam” program and press the “Start” button. Place the eggplant inside the steam container and steam for 15 minutes. Press the “Cancel” button. Remove eggplants from multicooker, cool, peel and chop.

Clean the multicooker bowl, make it dry, then pour oil into the multicooker bowl. Press the “Menu” button, select the “Stew” program and press the “Start” button. Let the bowl heat for 3-5 minutes, put cumin seeds and onion. Cook and stir for 5-10 minutes until the onion is tender. Add ginger garlic paste, curry powder and tomato, cook for 2-3 minutes. Add yogurt, eggplants and jalapeno pepper, season with salt. Close the lid and cook for 5-10 minutes, open the lid, mix and cook 5 more minutes with the lid closed. Press the “Cancel” button. Garnish with cilantro.

Put water in the multicooker bowl, select the “Steam” program. Place the eggplant on steaming container and steam for 30 minutes. Press “Cancel” button. Remove eggplants from multicooker, cool, peel and chop.

Clean the multicooker bowl, make it dry, then put oil in the multicooker bowl, press the “Menu” button and select the “Multicooker” program. Adjust the cooking temperature to 130°C and the cooking time to 20 minutes. Let the bowl heat for 3-5 minutes, put cumin seeds and onion. Cook and stir until onion is tender. Add ginger garlic paste, curry powder and tomato, cook for 3-5 minutes. Add yogurt, eggplants and jalapeno pepper, season with salt. Close the lid and cook for 5-10 minutes, open the lid, mix and cook for 5 minutes more with closed lid. Press “Cancel” button. Garnish with cilantro.

By pressing the “Product” button, go to the “Vegetables” section, press and hold “Start” button.  Place the eggplants on steaming container and steam it for 30 minutes. Press and hold “Cancel” button. Remove eggplants from multicooker, cool, peel and chop.

Clean the multicooker bowl, make it dry, then put oil in the multicooker bowl. Select the “Stew” program. By pressing the “Product” button go to the “Vegetables” section. Set the cooking time to 20 minutes, press and hold “Start” button. Let the bowl heat for 3 minutes, put cumin seeds and onion. Cook and stir until onion is tender. Add ginger garlic paste, curry powder, tomato and cook for 2 minutes. Add yogurt, eggplants and jalapeno pepper, season with salt. Close the lid, and cook for 10 minutes, open the lid, mix, and cook until the end of the program with closed lid. Press and hold “Cancel” button. Garnish with cilantro to serve.
