PUMPKIN FRITTERS (PAMPOEN KOEKIES)

Ingredients

• Cooked mashed pumpkin – 2 multi cups
• Self-rising flour – 1 multi cup
• Baking powder – 2 tsp
• Egg (beaten) – 1 pc
• Vanilla essence – 1 tsp
• Cooking oil – for deep frying
• Brown sugar – 1 tbsp
• Castor sugar – 50 g
• Ground cinnamon – 2 tsp
• Cinnamon sugar mix – for coating
• Salt – ¼ tsp
• Water – 1 L

Directions

Put 1 L water in the multicooker bowl, Press “Menu” and select the “Grain” program. And set the cooking time to 20 minutes. By pressing “Time” button and adjust the “Minutes”. And cook the pumpkin. Until the time finish.

Strain pumpkin, then mash it in a separate bowl, let the puree to cool completely. Then add the beaten egg, vanilla essence and mix. Put the rest of the ingredients and mix to a soft but firm batter. After that clean and dry the multicooker bowl.

Press the “Menu” button; select the “Fry” program. And set the cooking time to 40 minutes. By pressing “Time” button and adjust the “Minutes”. Close the lid and wait for 5-8 minutes (once the oil is hot).

Put 1 tablespoon of mixture into the oil and cook for 3 minutes with the lid closed. Flip with the spatula and cook the other side till golden brown. Remove fritters and place on paper towel. In a small bowl, combine castor sugar with cinnamon and sprinkle over hot fritters before serving.
